Kombucha FAQ

  • Do your kombuchas contain alcohol?
    All of our kombuchas are certified non-alcoholic which by law means that a drink must contain less than 0.5% alcohol by volume. Suja is one of only a few kombucha producers with this certification. All naturally fermented foods and drinks have trace amounts of alcohol.
  • What is kombucha?
    Kombucha is a fermented, lightly effervescent tea.
  • How does one make kombucha?
    Kombucha is made by fermenting tea, using cane sugar and a “Symbiotic Colony of Bacteria and Yeast” or SCOBY. During the fermentation process, this SCOBY eats cane sugar, turning it into healthy organic acids.
  • What are the benefits of drinking it?
    It’s a great way to quench your craving for a refreshing, bubbly drink while also feeding your microbiome. Suja Kombuchas have over 5 million probiotics*, as well as unique adaptogens such as schizandra berry, reishi, ashwagandha and moringa.

  • Is it Raw?
    • No. While some kombucha brands choose to not stop fermentation to allow for the classification as a “raw” kombucha, it creates risk of inaccuracies in sugar and alcohol levels by bottle. At Suja, we add a “kill step” to stop the fermentation so we can be transparent and accurate in disclosing the sugar and alcohol content to our consumers. However it’s important to note that this does not also kill the kombucha’s benefits.
    • Currently there is no legal definition of raw, so similar to the recent confusion around the claim all-natural, we choose to avoid using any of those vague or misinterpreted terms. Rather, we can tell you exactly what goes into our products and how they are made.
  • What's your process?
    In order to stop fermentation, our kombucha goes through a filtration process to remove the SCOBY and as an additional safeguard, we hold our kombucha at low level heat – about half the temperature and half the time that’s used in ultra-high temp processing (UHT)
  • How much should I drink daily? Is it unsafe to drink more than one bottle?
    There is no limit to the amount of our kombucha that you can drink daily. Because of the safety precautions we put in place before the bottle leaves our hands, we can ensure that your drink is safe and alcohol-free. If you are pregnant or nursing, please consult your doctor.
  • Do you use sugar?
    Yes, we use organic cane sugar as the natural fuel source for the SCOBY and to aid in the flavor profile.
  • Why is it in a glass bottle instead of plastic?
    We chose glass bottles because that is the industry standard and currently, glass is the most effective vessel for retaining carbonation. We continually work to assess what’s available in the marketplace to ensure we’re using the best possible option.
  • Is there caffeine?
    We do not add any caffeine to our kombucha, however there is a small amount of naturally-occurring caffeine that comes from the black tea.
  • Is juice added to Suja Kombucha?
    We add our very own organic juice to create unique, delicious flavor blends.
  • Is Suja Kombucha organic? How about non-GMO? Gluten Free?
    All of our products are organic, including our kombucha! They are also non-GMO and gluten-free.
  • Should I shake up the kombucha? Is separation normal?
    Separation is normal and you may see it occurring in many Suja products, but unlike our juices, Suja Kombucha is carbonated, so we do not recommend shaking the bottle. Instead, gently tilt the bottle upside down or back and forth until the sediment is mixed together.
