Pumpkin Spice Bread Recipe with Cider

Call us obsessed but we can’t get enough of our new Mulled Apple Cider! When we’re not drinking it straight or mixed up in a fun cocktail, we’re adding it to a tasty treat. This pumpkin cider bread combines our favorite flavors of the season like pumpkin and cardamom, sweetened with maple syrup, and can even be made gluten-free! Pumpkin Spice Cider Bread Recipe:

Makes 1 Loaf - 8 to 10 slices

  • 1/3 cup Suja’s Mulled Apple Cider
  • 1 cup Organic Pumpkin Puree
  • 1/2 cup Grapeseed Oil
  • 2/3 cup Maple Syrup
  • 2 tsp Vanilla Extract
  • 2 Large Eggs
  • 1 2/3 cup Flour (all purpose or gluten-free)
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 1/2 tsp Cinnamon
  • 1/2 tsp Powdered Ginger
  • 1/2 tsp Pumpkin Pie Spice
  • 1/2 tsp Cardamom
  • 1/2 cup Chopped Walnuts

Instructions:

Preheat oven to 350 degrees. In a medium size mixing bowl, use a whisk or electric mixer to beat the pumpkin puree, grapeseed oil, maple syrup, eggs, vanilla extract and Suja’s Mulled Apple Cider until combined. Add the flour, baking powder, salt and spices to the wet mixture and stir until smooth. Pour the batter into an oiled 9 inch loaf pan and bake in the preheated oven for 55-60 minutes, or until the loaf is firm to the touch. You can check doneness by sticking a toothpick in the center and making sure it comes out clean.
