Pumpkin Spice Cider Bread Recipe:
Makes 1 Loaf – 8 to 10 slices
- 1/3 cup Suja’s Mulled Apple Cider
- 1 cup Organic Pumpkin Puree
- 1/2 cup Grapeseed Oil
- 2/3 cup Maple Syrup
- 2 tsp Vanilla Extract
- 2 Large Eggs
- 1 2/3 cup Flour (all purpose or gluten-free)
- 1 1/2 tsp Baking Powder
- 1/2 tsp Salt
- 1 1/2 tsp Cinnamon
- 1/2 tsp Powdered Ginger
- 1/2 tsp Pumpkin Pie Spice
- 1/2 tsp Cardamom
- 1/2 cup Chopped Walnuts
Preheat oven to 350 degrees.
In a medium size mixing bowl, use a whisk or electric mixer to beat the pumpkin puree, grapeseed oil, maple syrup, eggs, vanilla extract and Suja’s Mulled Apple Cider until combined.
Add the flour, baking powder, salt and spices to the wet mixture and stir until smooth.
Pour the batter into an oiled 9 inch loaf pan and bake in the preheated oven for 55-60 minutes, or until the loaf is firm to the touch. You can check doneness by sticking a toothpick in the center and making sure it comes out clean.
You can find our Mulled Apple Cider in a large, multi-serve size at select Kroger, Costco and Sam’s Club stores this holiday season!
