Raspberry Chia Overnight Oats

Raspberry Chia Overnight Oats RecipeHaving a nutritious breakfast is extremely important; it provides you with the nutrition and fuel needed to stay focused and energized throughout the day. Unfortunately, if you're like me, you rarely have time to make breakfast in the morning. I always end up grabbing something quick before I leave the house or, on really busy mornings, not grabbing anything at all (not good given the above, I know!). I LOVE this Overnight Raspberry Chia Oats recipe because I can make it the night before and wake up to a satisfying, nutritious breakfast that I can easily take with me on the go. I adapted this recipe from Into the Gloss, feel free to tweak it for your taste!

Ingredients

  • 4 tablespoons chia seeds
  • 1/2 cup rolled oats
  • 2 cups unsweetened vanilla almond milk or one of our plant protein milks
  • 1 cup fresh raspberries
  • 1 teaspoon honey
  • 1 banana, sliced
  • raw almond butter

Method

1. In a jar, combine the chia seeds, rolled oats, and unsweetened vanilla almond milk. Add a squeeze of honey to taste. 2. Mix well and stick in the fridge to soak overnight. The mixture will thicken as the chia seeds expand. 3. Combine raspberries, honey, and lemon in a jar. Use the back of a spoon to mash the mixture together until it creates a jam-like consistency. (If you are using frozen raspberries, run them under warm water to make them easier to mash). 4. Stick in the fridge.

Assembly

5. In the morning, mix the raspberry chia overnight oats to evenly combine. 6. Use two glass jars and gradually add each layer to the jar. Begin with a layer of the chia oat mixture, top that with raspberry jam, and then layer of sliced banana. 7. Add the remaining chia oat mixture and top with almond butter. Enjoy!
