Crunchy Pumpkin Granola

Time to reflect, write, and to be inspired through cookbooks and browse for delicious recipes. Since pureeing my first pumpkin of the season, I am constantly craving anything with pumpkin. While growing up, I remember granola being a hearty mix of oats and honey with few other ingredients added in. If you walk down the grocery aisle today, you’ll find an entire section devoted to granola in all sorts of creative flavors and mixtures. This is a recipe you've got to try:

Crunchy Pumpkin Granola Recipe

Ingredients:
  • 3 Cups Rolled Oats
  • 1 1/4 Cups Raw Pecans
  • 1/3 Cup Pumpkin Seeds (Pepitas)
  • 3 Tbsp Brown Sugar
  • 1/4 tsp Sea Salt
  • 1 tsp Pumpkin Pie Spice
  • 2 tsp Ground Cinnamon
  • 1/4 Cup (uncooked) Quinoa
  • 1/2 Cup Pumpkin Puree
  • 1/3 Cup Pure Maple Syrup
  • 1/4 Cup Coconut Oil
  • 1 tsp Vanilla Extract
  • 2/3 Cup Dried Cranberries
Preparation: Preheat oven to 325 degrees. Line 2 baking sheets with parchment paper and set aside. In a large bowl mix the oats, pecans, pumpkin seeds, brown sugar, sea salt, spices and quinoa. In a small saucepan over medium-low heat, whisk the coconut oil, vanilla extract, pumpkin puree and maple syrup. Pour over dry ingredients and mix quickly with a wooden spoon until everything is moistened. Spread onto two lined baking sheets and bake each batch for 30 minutes. Make sure to stir every 10-15 min. so it doesn't burn. Remove from oven & allow to cool 20 minutes on baking sheets for maximum crunchiness. Pour into a large bowl & add dried cranberries. Store in an airtight container (should last about 2 weeks). Enjoy over almond milk, yogurt, or on it's own :) Serves: A LOT of people! This simple maple pecan granola recipe contains a light pumpkin flavor with just the right amount of spices. The maple and pecans are the real stars of this granola recipe. The toasted pecans and pumpkin seeds add just the right amount of delicious crunch and the whole mixture is brought together with a little vanilla and cinnamon.
